The Easiest Fruit Pie Recipe

Easy Fruit Pie recipe:

1/2 cup sugar

1/2 cup corn starch

4-5 cups frozen fruit (do not defrost)

Pie Crust

Bake at 425F for 15 mins then lower temperature to 350F for 1 hour. The initial heat blast laminates the bottom crust before the fruit gets a chance to melt thereby giving you a better chance at having a crispy (not soggy) bottom. After 30 mins check your pie. Cover crust edge with a pie protector or tin foil if it’s getting too dark. Let cool a little before slicing and eating. Tastes great with whipped cream.

Easy and Quick Chile Salmon

This is yummy and cooks quickly.  It's a no fail recipe.

Chile Salmon
1 salmon fillet
salt
lemon juice
olive oil
chile powder

Pre-heat oven to 400 F.  While oven is pre-heating, sprinkle fillet with salt and lemon juice.  When the oven reaches 400 F - place fish in a cooking spray coated baking dish.  Drizzle fish with olive oil and sprinkle liberally with chile powder.  Cook for 15-20 mins.

To check if fish is cooked through:  Insert a knife into the thickest portion of the fish, count to 3, place flat of knife against your arm.  If the knife is warm/hot the fish is done.  Not warm?  Fish needs more time.

Banana Chocolate Coffee Cake

This is the best banana bread/cake/anything ever!
This is the cake you want to make to sway a jury or win friends and favor.
The Best Ever.
It's heavy on the cake, light on the banana.
Perfect.
~
Banana Chocolate Coffee Cake
Cake: 3/4 cup semisweet chocolate chips (I use dark chocolate)
1 large or 2 small ripe bananas (1/2 cup banana puree)
3 large eggs
(I used 2 med tan, 1 med cream, 1 small blue- *hugs* to the chickens!)
1 1/2 cups sugar
3 cups flour
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup veg. oil
1 cup buttermilk
2 tsp vanilla extract
~
Glaze: 3/4 cup semisweet chocolate chips
3 Tbs butter
1/4 cup cream
1 Tbs light corn syrup
~
Preheat oven to 350F. Grease a 10 inch bundt-style pan.
~
Place chocolate chips in a med bowl and melt them in the microwave. Set aside. In another bowl, mash bananas and set aside.
~
Place eggs in a large bowl and beat them on high until they are light and foamy. Gradually add the sugar and beat until the mixture is thick - about 5 mins on high speed.
~
Gradually add the veg. oil to the egg mixture, scraping down the sides of the bowl. Continue to beat for another minute. Stir in buttermilk and vanilla.
~
Fold in the dry ingredients. Pour 1 1/2 cups of the batter into the melted chocolate and gently mix until the chocolate and batter are well blended. Fold in mashed bananas.
~
Pour half white batter into the prepared pan. Pour chocolate batter over this, top with remaining white batter. Swirl 2 batters together.
~
Bake for 60 -70 mins. Until a knife inserted in the center comes out clean. Allow cake to cool for at least 15 mins before removing from the pan. Glaze when completely cool.
Making glaze: Mix all ingredients in a microwave safe bowl. Melt. Stir together until the mixture is smooth. Allow to cool to slightly warm. Pour over cake.

White batters and chocolate batter.

Swirling batters together.

Baked and turned out on a pan to cool.

Partially sliced - to allow the chocolate glaze to run down inside and coat each slice.

Glazed.

Look at that!

Mmmm chocolate.

Best ever.... I'm just saying....why aren't you cooking this yet?

Mmmmm, I think I'll have another slice.......

Baked Potato Soup

Before this I'd never tried baked potato soup, because it was always made with bacon and chicken broth.

Continue stirring over med heat until mixture thickens slightly (about 3 mins.). Add cheese, potatoes and sour cream. Stir to combine and add salt and pepper to taste. If soup is to thick add a little more milk.

Or if you forget about the bake sale, that starts in an hour.

Lemon YumYums

1 pkg cake mix

1 stick of cold butter

2 large eggs

In a food processor blend cake mix and butter for 2 mins. Add eggs, mix until thoroughly combined, another 2 mins.

Everyday Pizza

I love, love, love pizza!
Homemade pizza is the best, but when I'm working I want something easy to grab and heat.
So, I buy frozen pizza, but I'm on a spending diet.
-I haven't bought groceries (excluding milk) in over 2 months!-
This is my recipe for Everyday Pizza.
Make up a bunch and freeze them or have a party and eat them all.
~
Everyday Pizza
Ingredients:
1 egg
1 cup water
2 1/2 cup flour (plus 1/2 to 1 cup more - see recipe)
3/4 cup white or yellow corn meal
2 Tbs olive oil
2 tsp yeast
1 1/2 tsp salt

Add all ingredients to your mixer.
Mix together.
If you are making this in the winter you will not need to add the extra flour, because the air in your home is dry.
However, if you are making this in the summer or in humid conditions you will
need to add the extra flour.
Slowly add 1 Tbs of the extra flour until you have a moist, but cohesive ball that pulls away from the wall of the mixer bowel.

Your dough should look like this.
It will be quite sticky.

Scrape the dough from your mixer and with wet hands make the dough into a ball.
Place the dough ball into a greased bowl.
Cover the bowl and place it in a warm place.
Let it rise for 30 mins.

After it rises it will look like this.
Pre-heat your oven to 425 degrees.

With wet hands pull the dough apart into 6 separate balls.
Place the dough balls on your greased or silpat covered baking pan.
Let the dough rest for 10 mins.

With wet hands shape/flatten the dough into pizza shape.

Spread 1/4 cup pizza sauce/tomato paste into the center of each pizza.

Bake pizza crusts for 15 mins.
Remove from oven.
Now 2 choices:
A. Let cool, wrap in foil and freeze.
B. Add cheese, spices and toppings.
Return to the oven and cook an additional 15 mins.

To cook frozen Everyday Pizzas -
Add toppings and cheese (you can also add these before freezing).
Bake at 400-425 degrees for 10 -15 mins
until cheese is bubbly.

Yum!
